Many cooks choose a vertical smoker for two main reasons: (1) they have a smaller footprint than a traditional tube offset smoker and (2) they use less fuel to operate by their design. We are now building vertical smokers in two design platforms and I hope I can help you make your decision on which style is best for you.
A. Offset vertical- the firebox is offset so you can have a grilling lid and channel the grease dripping away from the fire.
B. Vertical with firebox below- has the firebox below the meat and you would need to use a water or drip pan for grease collection. But these verticals are most efficient with fuel and space saving. They are easy to cover.
We can build either style all insulated but you would loose the grilling lid on the insulated vertical offset.
